TOMATO BISQUE SOUP


THIS IS A MODIFICATION OF MY SON RICK'S TOMATO BISQUE. HE LIKES IT A LOT HOTTER THAN WE DO. I HAVE A COPY OF RICK'S TOMATO BISQUE RECIPE BELOW
TOMATO BISQUE

ROUX    
       10    OZ   FLOUR
       10    OZ   BUTTER
  SEE HOW TO MAKE A ROUX

HEAT SMALL POT UNTIL HOT & ADD
        1       OZ           BUTTER
WHEN BUTTER IS HOT ADD
        8      OZ           ONIONS          ½” DICE
        8      OZ           CELERY             ½” DICE
SWEAT FOR 4-5 MINUTES & ADD
        3      CLOVES    GARLIC             MINCED
        1 ½    TS            SWEET BASIL LEAVES
SWEAT FOR 1 MINUTE & ADD
        2      12 OZ       TOMATO JUICE
        2      28 OZ       TOMATO - WHOLE
BRING TO A BOIL & ADD
        ½      TS            BAKING SODA
BAKING SODA CUTS THE ACID IN THE TOMATOES.
STIR & ADD
        1       QT           WATER
        1       OZ           CHICKEN BASE
        1 ½    TS            KOSHER SALT
        1       TS            BLACK PEPPER
BRING TO BOIL & RUN THROUGH  FOOD PROCESSOR, BLENDER OR HAND BLENDER
       

REMOVE FROM HEAT & ADD   
        16     oz             CREAM
        ½      CUP          PARMESAN CHEESE
USE WIRE WHIP TO BLEND
ENJOY!!



RICK'S TOMATO BISQUE

HEAT SMALL POT UNTIL HOT & ADD
        1       OZ           BUTTER
WHEN BUTTER IS HOT ADD
        20      OZ           ONIONS          ½” DICE
        20    OZ           CELERY             ½” DICE
        2      TS           GARLIC             MINCED
        2      TS            SWEET BASIL LEAVES
        1 1/2                 JALAPENO PEPPERS
        1/2    TS            CRUSHED RED PEPPER
COOK FOR 1 MINUTE & ADD
        2      12 OZ       TOMATO JUICE
        2      28 OZ         TOMATO - CRUSHED
       1/2    CUP          RICE - UNCOOKED
BRING TO A BOIL & ADD
        1       QT           WATER
        1       OZ           CHICKEN BASE
        1        TS            KOSHER SALT
      1/2       TS            FRESH GROUND BLACK PEPPER
BRING TO BOIL & RUN THROUGH  FOOD PROCESSOR, BLENDER OR HAND BLENDER
BRING BACK TO A BOIL        
REMOVE FROM HEAT & ADD   
        16     oz             CREAM
        ½      CUP          PARMESAN CHEESE
USE WIRE WHIP TO BLEND
ENJOY!!
