CHICKEN WILD RICE SOUP
MAKES ABOUT 5 QUARTS
 ROUX  
       12     OZ           BUTTER
       12      OZ          FLOUR   
                    
HEAT 6 QUART  POT UNTIL HOT & ADD
        2      OZ           BUTTER
WHEN BUTTER IS HOT ADD
        1       SM.          ONIONS             ½” DICE
        8      OZ             FRESH MUSHROOMS   SLICED
OK, YOU CAN USE CANNED MUSHROOMS IF YOU MUST
SWEAT FOR 4-5 MINUTES & ADD
        1      GAL          WATER
        3.2   OZ           CHICKEN BASE
BRING TO A BOIL & ADD
     1/2      #             WILD RICE
BRING TO A BOIL, COVER  & SIMMER FOR 1 HOUR
ADD ROUX
SEE  

AFTER ROUX IS THICKENED

ADD
        1       #             CHICKEN             ½” DICE
BRING TO BOIL
REMOVE FROM HEAT & ADD      
        1       PT            CREAM
USE WIRE WHIP TO BLEND
ENJOY!!
HISTORY
WHEN I DECIDED TO CREATE A WILD RICE SOUP I WANTED IT TO BE MY PREMIUM SOUP. I DECIDED TO ADD NOT ONLY CREAM, AN EXTRA LARGE AMOUNT OF WILD RICE BUT, ALSO A FULL DOSE OF CHICKEN BASE.

THE RECIPES I LOOKED AT DIDN'T HAVE MUCH CHICKEN IN THE RECIPE SO I  THOUGH IT WOULD BE A GOOD PLACE TO USE UP THE END PEACES OF THE TURKEY WE USED FOR SANDWICHES. I HAD ONE CUSTOMER SAY THE ALTHOUGH THERE WAS NOT A LOT OF TURKEY IN THE SOUP IT WAS A BURST OF FLAVOR WHEN YOU DID FIND A PIECE.

WE HAD OUR DOWNTOWN STORE OPEN AT THE TIME & WE DECIDED TO HAVE TURKEY WILD RICE ON WEDNESDAYS, EVERY WEDNESDAY WE HAD A LINE OUT THE DOOR TO GET THE WILD RICE SOUP.

I ,FOR SOME REASON, DECIDED TO ADD A FULL AMOUNT OF CHICKEN TO THE SOUP TO MAKE IT REALLY SPECIAL.
